Urgent PSA for all Melbourne truffle lovers: Ripe Cheese is set to launch the most delectable, oh-so-funky truffled cheese toastie as part of the annual QVM Truffle Festival.

Ripe Cheese is the world’s first all-Australian cheese shop, and has been treating Melbourne’s cheese-loving community to a curated selection of the best local cheese since late 2019. The specialist cheesemonger offers more than 50 varieties of Australia’s award-winning cheese from artisan cheesemakers including Berry’s Creek, Section 28, Holy Goat, Bruny Island, Woombye, Bay of Fires and Prom Country.

At the helm of Ripe is Singapore-born cheesemonger Hakim Halim, who has called Australia home for the past 10 years. Beginning his professional journey in digital marketing, Halim is now pursuing his passion for food to curate a perfect range of Australian cheese.

“It’s important to show support for our talented artisan cheesemakers,” Halim says. “We have created Ripe to be exclusively Australian. Every product – from cheese, crackers and condiments – is locally made, with more than 60 percent coming from Victoria. My dream is to have more Australians supporting our cheesemakers by giving Aussie cheese a fair go.”

Dedicated to bringing a touch of the gourmet to Queen Vic Market munchies, Ripe has created a unique and utterly droolworthy recipe with truffles front and centre… and all things in between. It’s the most truffle you’ll ever have seen in a toastie.

The toastie include 12-15 grams of freshly shaved Australian black truffle, a spread of black honey truffle from Truffle Paddock, a sprinkle of black truffle salt from Gewurzhaus, oozy gooey mozzarella and vintage cheddar sandwiched between buttered sourdough bread.

Truffled triple cream brie: you couldn’t get any more indulgent if you draped it in diamonds.

Ripe will also be featuring an exclusive truffled triple cream brie in partnership with artisanal cheesemakers Stone & Crow especially for the festival. The brie is layered with a generous amount of freshly shaved truffles and left to infuse for three days.

The Ripe truffled cheese toastie will be available at the Queen Victoria Market from June 19 to July 31. If their popularity last year is anything to go by, you’d better get in quick!
