Now that the Easter Bunny has come calling, you’re sure to have plenty of Easter eggs on hand. While chocolate eggs are certainly good enough to eat all on their own, there are also ways to use some of your bounty to whip up a delicious batch of baked goodies. So if you have family or friends coming over for an Easter get-together, why not make these ridiculously easy Easter cookies so you can greet them with a freshly-baked treat?

To lessen the sugar overload that often comes at this particular holiday, this recipe uses Lakanto monkfruit sweetener instead of sugar. It’s a 100 percent natural sweetening alternative with 93 percent fewer calories than sugar, zero net carbs, zero glycaemic impact and no artificial sweeteners or flavourings. And if you want to take things one step further, this recipe can even include sugar-free chocolate eggs or sugar-free choc-chips, so you can really cut down on the possibility of anyone lapsing into a sugar coma.

Super-easy chunky Easter cookies

You’ll need:

½ cup unsalted butter
½ cup Lakanto Monkfruit Golden Sweetener
1 whole egg
2 cups self-raising flour
1 tsp bicarb soda
Inclusions of your choice: mini Easter eggs, Easter egg pieces, no added sugar chocolate eggs or chips, nuts – it’s up to you!

Method:

1. Mix all the dry ingredients together.

2. In a bowl, mix the butter and sweetener until soft.

3. Add in the dry ingredients and mix until a breadcrumb consistency is reached.

4. Next, whisk your egg and add the whisked egg mix until you form a loose dough.

5. Fold through Easter eggs or other treats of your choice.

6. Roll dough into 12 evenly-mixed balls. Place on a non-stick or lined baking tray and cook for approximately 20 minutes until golden.

7. Allow to cool before serving.
